The classic way: pour just enough broth over yellow turmeric noodles, top with rice cracker (banh da), peanuts and fresh veg, and mix. Compare the chicken-shrimp classic, frog (ech) and pork-shrimp versions one shop at a time. Locals treat mi quang not as a 'soup' but as a 'mixed noodle.'
